Omakase is a Japanese dining style where the guest leaves the menu selection to the chef — often translated as “I leave it up to you.”

At Shun Omakase Counter — an intimate 11-seat counter in Berawa, Canggu — the chef prepares a sequence of 13 to 18 seasonal dishes based on balance and pacing. Each course is served at the right moment, directly across the counter, so guests can experience the detail behind the preparation.

What Makes Omakase Different?

In a regular sushi meal, guests usually choose individual rolls, nigiri, or sashimi. In omakase, the chef decides the sequence, so the meal feels more balanced — each dish prepared to follow the one before it. The experience is also more personal: guests can watch the preparation closely, ask questions when appropriate, and enjoy the rhythm of a chef-led meal.

What to Expect at Your First Omakase

  • A chef-led sequenceCourses arrive in a planned order, usually building from light and delicate to rich and bold.
  • Counter seatingYou sit facing the chef and watch each course prepared in front of you.
  • Seasonal ingredientsThe menu changes with what is fresh, so no two visits are identical.
  • A relaxed pacePlan for roughly 1.5 to 2 hours and avoid scheduling anything immediately after.

Frequently Asked

What does omakase mean?+
Omakase means allowing the chef to choose the meal for you. It is often translated as “I leave it up to you.” Instead of ordering from a menu, you enjoy a curated sequence of dishes selected by the chef.
Is omakase only sushi?+
Not always. Many omakase experiences include sushi and sashimi alongside cooked dishes, seasonal bites, and other chef-led courses.
How is omakase different from ordering sushi?+
With regular sushi you choose individual rolls, nigiri, or sashimi. With omakase the chef designs the entire sequence, so each dish is prepared to follow the one before it in a balanced flow.
Is omakase good for beginners?+
Yes. Omakase is ideal for first-time guests because the experience is guided from start to finish, so you do not need to know what to order.
How long does omakase take?+
Most omakase menus take around 1.5 to 2 hours. It is a slower, more intentional meal than casual dining, so it is best enjoyed without rushing to another plan straight after.
